Tempeh is one of the oldest foods on the planet. Originating in ancient Indonesia, tempeh is
simply caked fermented soybeans. It’s also one of the healthiest plant-based protein meat
alternatives out there. Unlike tofu, it has a meaty, firm texture and yummy nutty flavor. As a
result, it’s incredibly versatile. We love using it in sandwiches (especially my plant-based
Rueben), You can also crumble cooked tempeh onto salads and stir-fries to add a meaty
texture and flavor. I may not have perfected the tempeh Rueben sandwich, but this is my
quick go-to recipe when I get that craving for the classic American sandwich.
